Essential Functions:

  • Responsible for writing transfers and food requisitions overseen by the Executive Chef or Executive Sous Chef.
  • Prepare designated food items according to standard recipes and policies.
  • Promote teamwork between kitchen and banquet kitchen.
  • Consult on daily and weekly banquet forecast and special functions.
  • Supervise staff and ensure cleanliness of kitchen equipment.
  • Place orders for necessary equipment with Stewarding Department.
  • Supervise and train staff.
  • Ensure proper breakdown of banquet functions and food rotation.
  • Complete food transfers and report irregularities to management.
  • Ensure stations are clean and food items are properly stored.

Qualifications:

  • High school diploma or equivalent.
  • Three to five years culinary experience in a hotel or conference center.
  • Previous experience supervising a staff of fifteen or more employees.
  • Three years of culinary training.
  • Good working knowledge of basic accounting.
  • Creative, innovative, and assertive personality.
  • Excellent communication skills.

Basic Function: The Banquet Chef is responsible for all food and beverage preparation for scheduled functions.

Marginal Functions:

  • Respond to tasks assigned by management.
  • Assist in other areas of the kitchen as needed.
  • Develop and maintain education programs for sanitation and safety.
